Observation: Floor construction, wall construction, mop sink area and water ponding at freezer, proofer drain and mop sink area needs long-term plan.

Comments

Cleaning occurred to following areas:
- Behind oven; under and around mop sink; under corner work station; ** deterioration of floor makes complete cleaning virtually impossible. Continue to develop plan for long-term upgrades to facility. Submit to this office within three weeks.

Noted procedural changes:
-New metal shelving unit;
-sanitizing procedures for cloths and work surfaces (dedicated sink with bleach water solution at 100 ppm);
-repaired faucet at mop sink; (leaking onto floor still a problem for under area - part of long-term improvement plan);

Continue to work towards developing a comprehensive sanitation plan and submit to this office for review.
