Observation: The sliding door cooler by the sink is at 12 degC. But at the time of the inspection, staff had moved hot foods e.g. soups and chicken into the cooler to cool.
Corrective Action(s): As discussed, cool foods in the walk-in cooler, not the sliding door cooler. The hot foods were moved to the Walkin cooler during the inspection. Monitor the temperature of the sliding door cooler. IF it doesn't drop to 4 degC or below within the next hour, move all PHF's into other coolers and get the unit repaired.
