Observation (CORRECTED DURING INSPECTION): Mashed potatoes in large plastic food tray, stored covered on the lowest shelf, covered.
Internal temperature 13C, surface temperature 12C.
Other items in same cooler are below 4C.
Staff said this was made last night (>6hrs ago).
Corrective Action(s): 1. Discard mashed potatoes and any other food items that have undergone improper cooling (items that have not reached 20C in 2hrs and 4C in 4hrs during cooling).
2. Ensure all items are cooled as rapidly as possible to prevent growth of pathogens.
e.g. Use small shallow containers, small batches, stir during cooling, metal containers.

Corrective Action(s): 1. Repair back dry storage area to ensure all surfaces are durable, easily cleanable.
2. All equipment not in use: ensure these are routinely cleaned (Today). Remove unnecessary items from food premises.

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Hand washing was observed during the inspection
o Gloves were used appropriately
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C

Food Processing and Food Protection
o Approved Food Source - Ingredients are from approved sources. Meat is from commercial retail and approved source.
o Food Storage - Majority of food is stored in covered containers.
-Raw meats are stored on the lowest shelf
-Main upright cooler could use some organization to prevent cross contamination - keep meats and vegetables separate and covered in containers.
-Line cooler is well organized - buns are kept in neat bags, organized in drawers below.

Maintenance and Sanitation
o Dishwasher - 100ppm Chlorine sanitizer
-Dishwasher is new with easy to read panel for monitoring.
-Dishwashing area is organized, has flow from dirty to clean.
o Sanitizer bottles - have 100ppm Chlorine, stored away from food, in main food prep area.
o Storage of chemicals is separate and away from food
o Pest control - there are no signs of pests at the time of inspection.
