Observation (CORRECTED DURING INSPECTION): Observation: Sanitizer bucket at front service area at 50ppm QUATS. Sanitizer dispenser at back 3-compartment sink measured at 0ppm.
Health rationale: Inadequate sanitizer concentration for food contact surfaces and equipment allows exponential microbial growth and/or formation of spores which can lead to foodborne illness.
Corrective action: (Corrected during inspection): Sanitizer dispenser bottle replaced during inspection. All sanitizer buckets were replaced with 200ppm QUATS solution which is required for adequate sanitation of food contact equipment. Ensure sanitizer buckets with wiping cloths are replaced with 200ppm QUATS frequently aso that they are able to maintain adequate sanitizing concentration.

Observation (CORRECTED DURING INSPECTION): Observation: Ladder and cart obstructing handwashing station in back area.
Health rationale: Obstructions by handsinks may discourage adequate and/or frequent handwashing practices which are required for elimination/prevention of cross-contamination between food handlers and foods.
Corrective action: Remove all obstructions from the handsink area (ladder and cart). Ensure the handsink station is always free of obstructions to encourage frequent handwashing by food handlers.

Observed during inspection:

Sanitation:
-Adequate handwashing stations at front counter/service area with running hot and cold water, paper towel and liquid soap.
-No signs of pests during time of inspection.
-dishwasher (high-temperature) measured at 78C at plate surface temperature.
-Utensils at front service area stored in clean and sanitary manner.
-Ice machine clean and sanitary with scoop placed outside.
-Espresso machines all clean and sanitized.
-3-compartment sink available with drain plugs.

Temperatures:
-Storage coolers at front adequate.
-ambient temperatures measured with probe thermometer at 1.1C (Sandwich probed).
-Milk probed in storage cooler by coffee preparation station at 3.2C internal temperature.
-Stand-up freezer at -18C, all food is frozen and neatly organized.
-Stand-up cooler adequate.
-Milk probed at 3.3C internal temperature.
-good organization.

General/other:
-Staff personal items placed away from food preparation area.
