- All hand washing sinks in kitchen were properly supplied
- Quat sanitizer solution available at 200 ppm. Ensure all sanitizer buckets are filled up enough such that cloths are completely submerged in the solution.
- Low-temperature chemical dishwasher measured to have 100 ppm chlorine residual at the dish surface, detected after rinse cycle
- All coolers were measured at 4C or colder
- Freezer measured at -23C
- No hot holding at time of inspection (soup is normally hot held, ensure soup is held at 60C or hotter).
- Food storage practices satisfactory - all food stored covered and off the ground.
- Equipment maintained in sanitary conditions
