306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: 1) Fan cover in walk-in cooler covered in dust. 2) Exposed portion of wall behind glass cooler appeared covered in food debris/sticky substance. Corrective Action(s): 1) Clean the fan cover, remove dust. 2) Remove substance or repaint the wall if necessary to ensure smooth, non-porous surface. Will minimize the potential to harbour bacteria. Date to be corrected by: December 6, 2021. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Glasswasher unable to achieve minimum sanitizing concentration for final rinse. Recorded 50ppm at time of inspection. Corrective Action(s): Service glasswasher to be able to achieve minimum sanitizing concentration of 100ppm. Date to be corrected by: December 6, 2021. Violation Score: 3 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27] Observation: Spray bottles were labeled as Virox5 Accelerated Hydrogen Peroxide solution but were instead filled with QUATS sink and surface sanitizer solution. Please ensure paper towels are accessible (do not store on top of compressor unit). > Bleach solution available at 100ppm. > QUATS sanitizer solution available at 200ppm. > Ice machine maintained in sanitary condition. Scoop stored outside in plastic bin. > Glasswasher was not used yet today, only turned on to verify sanitizer concentration. > No signs of pests at time of inspection. > General organization and sanitation is good. COVID protocols: > Facility scans vaccine cards upon entry to the building. > All staff on site are masked. Signature not obtained due to COVID protocols. Report reviewed with manager on site.
