Comments

New manager and staff in the kitchen. The cook is FoodSafe certified. Manager's certificate has expired and will be taking the course.
Some mouse droppings noted along the floor wall junction in the dry storage area. They have been removed. Monitor and advise pest control company. Ensure adequate number of traps are used in the kitchen/restaurant.
Record temperatures and sanitizer levels on a log sheet.
Obtain sanitizer test strips.
Temperature of the refrigeration units and steam tables are satisfactory.
Sanitizer level of the dishwasher(chlorine) and sanitizer in the buckets(quats) are satisfactory.
