Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Foods in the walk-in Cooler are above 4 degC. Ribs were at 7 degC; Roast at 9.5 degC; pasta sauce was at 8.1 degC.
Correction: All the PHF's were discarded during the inspection. Do not store any more PHF's in the walk-in cooler until it's fixed and can maintain a temperature of 4 degC or below.
Comments

On Follow-Up:
-Work order from Abu Refrigeration was received on July 10, 2018. Tech fixed a hole and replaced gas. A larger compressor and condenser has been ordered and will be installed once received.
-The temperature inside the walk-in cooler is now 4 degC.
-Continue to monitor the temperature and record it on a logsheet every day. This should be done for all your coolers and hotholding temperatures. Keep a log that I can check during inspections.
-Tap at the sink has been fixed.
-Closure Order rescinded. You can re-open for business.
