205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (egg sandwiches, burgers, and cheese/pepperoni sticks with a label "keep refrigerated") were stored above 4 degrees C inside the display cooler which was at 7.4 degrees C at the time of inspection. Temperature records were not being maintained on-site. Operator initially denied transferring the food over to the other working cooler and then transferred it upon verbal direction by the district E.HO. when the corrective action involving the 2 hour rule was mentioned.
Corrective Action(s): Ensure all cold potentially hazardous is stored at or below 4 degrees C as this is a regulatory requirement under the Food Premises Regulation and to prevent growth of any potential harmful bacteria that can cause foodborne illness. Failure to comply will result in enforcement action (Corrective ORDERS and/or Violation Tickets).

Observation: Display cooler was above 4 degrees C (7.4 degrees C) and went up to 7.7 degrees C at the time of inspection around 1:30 PM. Operator mentioned that it may be on a defrost cycle (note: this time does not match the previously mentioned defrost cycle times). Manager mentioned that the defrost cycle may last 3-4 hours, which is unacceptable as cold potentially hazardous food is stored inside this cooler.
Corrective Action(s): 1. Do not store any cold potentially hazardous food inside this cooler until it is maintained at or below 4 degrees C; Correct immediately. Failure to comply will result in enforcement action (e.g. issuance of Corrective ORDERS and/or Violation Tickets).
2. Adjust/re-service/repair/replace the display cooler if it does not return to a temperature of 4 degrees C (40 degrees F) or less; Correct within 1 week. Update the district Environmental Health Officer within 1 week. A follow up inspection will be conducted later today prior to 5 PM to check the temperature of the display cooler again.

Comments

Routine inspection conducted:
-Handsink and handwashing station were adequately supplied with hot and cold running water, liquid soap, and paper towels.
-200 ppm QUATS sanitizer was available in the spray bottle.
-Quaternary ammonium compounds sanitizer and bleach was present onsite as a sanitizer.
-3 compartment sink was operational and drain plugs were available.
-Walk-in-coolers and other coolers (apart from the display cooler) were at or below 4 degrees C.
-Freezers were at or below -18 degrees C.
-No signs of recent pest activity were observed at the time of inspection.
-Manager showed a letter indicating that they have completed the FOODSAFE Level 1 course.
