Observation:
There is a big bag of flour that had a hole cut into the centre of the bag. Pests will get into the flour.
Corrective Action(s):
Immediately transfer the flour into a food grade, plastic bucket and cover it with a lid. All open packages of food and spices shall be stored in containers with tight fitting lids.

Observation:
1) There were old mice droppings in the cupboards below the hand sink in the waitress area, and openings around the water pipes. These openings can allow pests to access the premises.
2) The screen door, on the back back, has a gap at the bottom that will allow pests in.
Corrective Action(s):
1) Clean and sanitize the lower cupboard to remove mice droppings. Stuff the openings around the water pipes with steel wool.
2) Install a door guard or door sweep on the bottom of the screen door to keep pests out.

Observation:
Accumulated grease in the grout between wall tiles; on wall tiles beneath & behind prep tables and pancake table; and on the floor along the base of the wall under the cooking station. This will attract pests.
Corrective Action(s):
Use hot soapy water, degreaser, and a scrub brush to wash the grout, wall tiles and floors. Wall the floor beneath the cook station every night, and wash the grout and wall tiles every week.

Observation:
Food being stored in tin cans. This is not acceptable as the tin can will start rusting when the metal, food, and oxygen are mixed together. The rust will contaminate the food and could make people ill.
Corrective Action(s):
Immediately transfer all food in tin cans, into food grade containers (stainless steel, glass, or hard plastic) and cover with a lid or saran wrap. Discard all tin cans and stop using them as a food storage container.
