Code 205 noted on Routine inspection # AKWN-BQXUAP of Jun-26-2020
Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1. Garlic butter next to grill not stored at 4 degrees Celsius or less.
2. Milk in drink cooler not stored at 4 degrees Celsius or less.
Correction: 1. Operator indicated garlic butter is brought out from cooler and stored on ice beside grill. At time of inspection ice had completely melted, but garlic butter was at 7 degrees Celsius (per probe thermometer). Informed operator to ensure garlic butter is always stored on ice and not to wait until ice has completely melted to replace it.
2. Drink cooler was found to be 15 degrees Celsius. All drinks in the cooler were not potentially hazardous except for the milk. Discard the milk as it has been in the temperature danger zone. Operator removed the milk from the drink cooler.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Fruit flies were found in the pop gun nozzle and in the pop gun holder.
2. Pooling water found on the bottom food storage area of the prep cooler closest to the servery and the double door stand up cooler closest to the stairwell to upstairs staff area.
Correction: 1. Pop gun and pop gun holder must be cleaned and kept clean on a daily basis to prevent sugary drink residue from attracting flies.
2. Clean up the pooling water and either use a container to catch the water leaking from the drain hose and/or do not store food on the bottom storage area of both coolers.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: In-use wiping cloths were not stored in sanitizer in between uses.
Correction: In-use wiping cloths must be stored in sanitizer to prevent bacteria/germs from growing on them. At time of inspection quats sanitizer in buckets were available but not used to store in-use towels. Quats sanitizers had concentrations of 200ppm.

Follow up inspection
Garlic butter was stored on ice to maintain at 4 degrees Celsius or less beside the grill.
Drink cooler was still 15 degrees Celsius but only used to store non-potentially hazardous foods (e.g. bottled beer and canned pop).
Discussed with operator to also have this cooler serviced when the two leaking coolers are repaired, since they are not able to adjust temperature using thermostat.
Operator cleaned pop gun nozzle and holder and surrounding areas to help prevent fruit flies.
At time of inspection there was less pooling water on the bottom of the prep cooler (closest to servery) and double door cooler (near stairwell).
Discussed with operator to use more containers (i.e. trays, larger inserts, etc.) to store other containers of food to prevent contamination from pooling water.
In-use wiping cloths were stored in quats sanitizer.
Discussed with operator to ensure quats sanitizer and cloths are changed every 2-4 hours, or when the sanitizer starts to become cloudy. Organic matter in the quats sanitizer will make the sanitizer less effective.
