Comments

Upright cooler in the front serving area has now been repaired. Shrimp salad stored at 4 C or below.
All coolers, freezers, equipment and surfaces have been thoroughly cleaned and sanitized.
Floor behind the deep freezers have been cleaned to remove food debris.
Spray bottles of bleach are now labelled.

* Mayonnaise must be kept refrigerated once the bucket or container is opened.
Temperature logs are now maintained for all coolers.
* Ensure to monitor and record hot holding temperatures for miso soup and rice at least once a day.
* Monitor and record sanitizer concentration (chlorine) in dishwasher and spray bottle at least once a day.
* Cleaning logs must be checked on a weekly basis to ensure compliance with sanitation requirements.
