Observation (CORRECTED DURING INSPECTION): Ice scoop and bowl were observed immersed in ice within ice machine.
Corrective Action(s): Items were removed and sanitized at the time of inspection. Please ensure that the ice scoop is properly stored outside of the ice to protect from potential contamination.

Observation: Storage room reach in freezer measured at -8 degrees C. Significant buildup of ice observed.
Corrective Action(s): Please have reach in freezer defrosted and cleaned. Please ensure that all frozen foods are maintained at temperatures of -18 degrees C or less.

Observation: Food debris and/or grease observed in the following locations:
1. On front and back ventilation hood canopies
2. Underneath pallets in storage room.
Corrective Action(s): Please have the above-noted areas properly cleaned and sanitized. Food debris and/or grease may attract pest activity and potentially contaminate food and food contact surfaces. Date to be corrected by: January 16, 2018.

Comments

Routine inspection conducted:

- Walk in cooler at 4 degrees C. Food items are well organized and protected from contamination.
- Prep cooler at 3 degrees C (below) and 5 degrees C (above). Please ensure that all food inserts are maintained at 4 degrees C or less and are covered when not in use.
- Kitchen reach in freezer at -17 degrees C
- Storage chest freezer at -21 degrees C
- Hot holding internal temperatures at 60 degrees C or more (rice warmers)
- Sanitizer available in bucket at 100 to 200 ppm chlorine. Please ensure that wiping cloths are stored inside of sanitizer when not in use.
- Three sink plugs available for manual warewashing. Sanitizer in third sink compartment was measured at 100 ppm chlorine.
- High temperature dishwasher measured 72 degrees C at utensil surface (minimum 71 degrees C).
- Hand washing sinks (front, back) are supplied with hot and cold running water, liquid hand soap, and single use paper towels. Reminder: Please ensure there is adequate space around the back hand sink to allow easy access at all times. Trolley that was partially blocking access to the hand sink was moved during inspection.
- No evidence of pest activity observed. Most current pest control report dated 20/12/2017 states no recent pest activity.
- Temperature records are being maintained for the walk in cooler and are available for review.
- FOODSAFE requirements met at time of inspection. Reminder: Operator's FOODSAFE certificate is valid until October 6, 2018.
