Comments

All coolers 4C or less (walk in, inserts, undercounter..etc). Walk in freezer -19C, Hot holding of soups, meatballs..etc higher than 60C
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Quat sanitizer at source and in spray bottle 200ppm. Staff use single use paper towel to wipe counters.
Manual ware washing procedures observed at time of inspection . Wash sink and sanitizer sink well filled with soap water and quat sanitizer (measured at 200ppm). Spray nozzle used in middle sink to rinse each individual piece of equipment/utensil. No concerns. No test strips available for staff. Obtain test strips.
