Observation: 1. Observed items in the walk-in cooler and other areas not properly covered when not in use. All items should be covered to prevent physical contamination.
2. Staff were working on making samosas, metal pan to put on finished products were sitting directly on top of samosa filling. Bottom of the metal pan should be not be touching the food directly as it is difficult to maintain sanitary conditions.
Corrective Action(s): Required operator to cover all items in the walk-in cooler. Metal pan for finished samosas was re-located. Educaiton provided to ensure it does not happen again.

Overall sanitation is satisfactory; fan hood in sanitary conditions.
No major build-up of food debris and grease noted near the cooking area. Minor spills noted but no accumulation.

All coolers at 4 C or lower
All freezers at -18 C or lower
Bleach sanitizer was available on site and in use; detected 200 ppm of residual chlorine
Three compartment sink used for manual ware-washing
No sign of pests noted at the time of inspection
Clutter of items noted in the storage and main kitchen due to limited space. Organization is required to remove clutter so adequate cleaning and monitoring of potential pest issue can be done.
