Comments

Walk-in cooler shelves, surfaces and fan cover have been cleaned. Good.
Beer walk-in cooler has been thoroughly cleaned.
Ice scoop is now stored in a clean bucket.
Chlorine sanitizer tested 100 ppm in the bar washer. Good. Ensure to test and record sanitizer concentrations at least once a day.
Holes in the wall by the back entrance has been sealed with foam sealant. Good.
Walk-in cooler and prep coolers registered 4 C or below.

* Ensure that proper test strips for testing SmartPower sanitizer are available on site for daily testing of the sanitizer levels at the dispenser.

*Ensure that staff do not stand on the food storage shelves in walk-in coolers. Proper step stools must be used for this purpose.
