Corrective Action(s): Ensure there is no pooling of water and drains are kept in a clean condition. This area requires a deep clean.
Follow recommendations from pest control company.
Consider installing a splash guard at the sink to contain the water.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Single door standing cooler used for dough and egg-nog at 7.7 C.
Corrective Action(s): All coolers must be at 4 C or below. Egg-nog was re-located to a cooler at 4 C or below.
Lower the temperature/service cooler so it can maintain a temperature of 4 C or below. Until then, do not use it for the storage of potentially hazardous foods.
Do not rely on the digital temperature gauge; place a thermomter inside the cooler.
Correct by November 25, 2022.

Routine Inspection

-Two-door cooler at 4 C or below.
-Single door cooler (see above violation).
-Freezer was at -10 C (should be -18 C, monitor and adjust if necessary).
-Quats in sanitizing compartment of sink registered between 200-400 ppm.
-Quats solution for surface sanitizing in spray bottle registered between 200-400 ppm.
-Pest control services in place. Records available for review.
-Permit to Operate posted.
-FSP 13-1 Display Management System Logs maintained - good job.
-Hand sink equipped with liquid soap and single-use towels. Note: it takes a few minutes to get hot water; this should be addressed as staff may not wait around for the hot water.
-General sanitation and organization can be improved around shelves, walls, and behind/underneath equipment.
-Open bags of flour should be kept in a pest proof container at the end of the day.
