- Dishwasher achieving final sanitizing rinse of greater than or equal to 50 ppm chlorine at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT AND 200ppm Chlorine; items labelled with date and time
- Three compartment sink method in use and at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- Ice machine and scoops in good sanitary condition

- First In First out and date stamping methods observed in use - unit broken however staff currently using hand written labels - EXCELLENT WORK!

NOTE: Dishwasher temperature running low. Temperatures should be high enough to ensure grease is removed from dishes (above 44 degrees Celsius). Dishwasher temperature temperature today did not exceed 33 degrees Celsius. This may have been due to time of day however discuss with technician during next service.
