Observation: EcoMiser main dishwasher reached 71.8, 67.8 and 71 C at the plate surface during 3 consecutive cycles. Under counter dishwasher in the Coffee prep room was only at 65 C during first run.
Corrective Action(s): Adjust the dishwasher so that it reaches at least 71 C at the dish surface (ideally 75 C) during each cycle. A max/min recording thermometer must be used for monitoring santiizing water temperature at least once a day. Similar monitoring must also be conducted for the dishwasher located in the coffee prep room.

Re-opening inspection following extensive renovations to the kitchen.
Renovations completed as per approved plans.
All walls in the kitchen are covered with washable white tiles. Good.
Walk-in cooler below 4 C.
Upright cooler at 5.6 degrees C. Ensure to adjust the temperature to 4 C or below.
Upright freezer below -18 degrees C.
Wall mounted liquid soap dispensers at all hand sinks.
Mop sink available.
General sanitation is satisfactory
Quats sanitizer in the spary bottle tested 200 ppm
*Please send a copy of the updated food safety and sanitation plan to our office by Nov. 30, 2017.

Re inspection required to confirm if the dishwashers are sanitizing temperatures.
