General observations/Good Practices:
-All handwash stations (coffee bar, kitchen, staff room) were equipped with hot/cold running water, soap, and paper towels
-No pest activities were observed
-Last pest control company report (May 12, 2023) was reviewed --> minor ant sightings were found by coffee station but eliminated
-Sanitizers observed:
1) Peroxide spray bottles @ 5000 ppm
2) QUAT dispenser at 3 compartment sink @ 200 ppm
3) Chlorine used in low temperature mechanical dishwasher and rag buckets @ 100 ppm
--> Test strips available and concentrations monitored/ recorded twice daily
-Ice machine deep cleaned by third party company monthly --> No biofilm observed
-Fumehood panels washed/sanitized daily
-Raw meat/chicken stored in freezer away from ready to eat foods
--> Cooked from frozen
-Staff handwashing observed --> adequate duration (20 seconds) and thorough
-Digital temperature monitoring of coolers, freezers, hot holding units, etc.
-Hot held food items had internal temperatures > 60 deg C:
1) Apple pie @70 deg C
2) Hashbrown @ 68 deg C
3) Chicken patty @ 76 deg C
4) Chicken nuggets @ 62 deg C
--> Timer available for each item (<1 hour)
-Three staff onsite had FOODSAFE Level 1 training
