Observation: Mouse activity including droppings and pieces of insulation noted in the kitchen. Most activity limited to floor, but all shelves and food areas should be cleaned and monitored for further pest control actions.
Corrective Action(s): Immediately clean up the kitchen as discussed. Call Pest Control technician to evaluate and implement a plan of action to reduce activity and presence of mice in premises. Block identified rodent access points in walls of premises in manner that will deter them from easily eating through blocked off areas. Follow advice of Pest Control technician.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Kitchen observed slightly unclean, especially in hard to reach areas of floor, but also some of the direct food contact surfaces. The prep sink is important to be cleaned and sanitized daily to avoid food cross contamination. A build up of mouse droppings noted on the floor in corners of kitchen including, floor and lowest shelf at dishwasher, behind cookline, under upright cooler, in storage room around hot water tank etc.
Corrective Action(s): Kitchen must be thoroughly cleaned to help control rodent food access, activity and movements. Cleaning will also reduce risk of general food contamination.

Make sure to stock paper towel dispenser at front handwash station at all times or have acceptable alternative provided.
Make sure to keep ice scoops in designated holder or in container outside of unit. Do not allow scoops to sit directly on ice.

Bleach solution (100 to 200 ppm) in labelled spray bottles must be kept in food prep areas for regular sanitizing purposes. DO NOT USE Lysol cleaner in food prep areas and make sure to label the bottles appropriately. **Labelled during inspection.

Cooling units all less than 4 C.
Freezers around -15 to -25 C.
Dishwasher at 73 C at plate.
