- Retail Display Meat Coolers: <4 deg C **Ensure that products are not stocked beyond the load line.
- 200 ppm Quats sanitizer used for sanitizing equipment in warewashing sink.
**Ensure that equipment is allowed to properly air dry before storage. Additional racking may be required to address this.
- Wiping cloths stored in 200 ppm Quats sanitizer.
- Cleaning and sanitizing procedures reviewed at time of inspection. Pork and beef are processed in different areas of the meat processing room at different times. Cleaning and sanitizing of all equipment take place between species.
