205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): - Observed prep cooler unit holding foods at 18.3C (sauce in top unit) and at 7.8C (sausage in bottom unit). Foods had been held in cooler unit overnight.
Corrective Action(s): - Operator was told to immediately discard all perishable foods within the cooler unit. Operator did so. Ensure that all potentially hazardous foods are kept at 4C or below at all times in order to prevent growth of pathogens. It is recommended that a probe thermometer be purchased and use daily to ensure that this parameter is met.

Observation: - Observed the ice scoop sitting in a dirty container above the ice bin
Corrective Action(s): - Immediately wash and sanitize the ice scoop and the container that it sits in. Must ensure that all utensils and food contact sufaces are maintained in a sanitary conditon at all times in order to prevent cross-contamination of the ice

Observation: - Observed that back emergency exit door had part of the door sweep missing and a large enough gap for pests to enter the food premises
Corrective Action(s): - Must replace door sweep and ensure that no gap exists underneath the door for pests to enter as pests can lead to contamination of food products

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Observed accumulation of debris underneath the counters in the bar area (two moldy lemons, many bottle tops)
- Observed debris in hard-to-reach areas within the kitchen (e.g. behind or beside equipment such as coolers, underneath counters and in corners)
Corrective Action(s): - These areas must be cleaned immediately and the frequency of cleaning must be increased in hard to reach areas such as underneath counters and equipment and behind and beside equipment. Accumulation of debris can attract pests such as ants

Observation: - Observed that prep cooler unit could not reach a temperature of 4C or below. Air temperature read 13-14C.
Corrective Action(s): - Must ensure that all cooler units are working correctly and able to keep potentially hazardous foods at 4C or below at all times.

Comments

- All sinks had hot and cold running water, liquid soap and single-use paper towel
- Iodine glasswasher in bar area had an iodine concentration of 16.92 ppm
- QUATS sanitizer was in-use (spray bottles) and concentration was at 400 ppm
- The high temperature dishwasher reached 71C at the plate level upon final rinse cycle. Baffles appear clean. **Labels on food containers should be removed prior to entering dishwasher as they can clog the baffles and prevent proper cleaning from occurring.**
- No pests observed at time of inspection
- Storage of food items is good; foods are protected from contamination
- All freezers are working adequately
- All hot-holding units are holding foods at 60C or above
- Remaining coolers (not including the violation noted at the food prep cooler) were at 4C or below
- Permit was posted in a conspicous location
- Staff with FOODSAFE Level 1 present
