Staff in kitchen today has a valid Food Safe certificate (exp 2028).
Coolers are at 4C or colder. ***Keep daily temperature records - see above.
Hot food is at 140F/60C today. Reviewed procedures for cooling.
Hand washing sinks in dining area and main kitchen - both have hot/cold water, liquid soap, and paper towels.
Chlorine sanitizer in labelled spray bottle - is at 200++ppm. 100-200ppm required so further dilute with water and make fresh daily. Verify with test strips.
**Cleaner disinfectant - for cleaning non-food contact surfaces (10 minute contact time and potable water rinse required).
Dishwasher - using sani-cyle and hot dry cycle.
Premises clean and well-organized.
No obvious signs of pests.
**Note that shelves in dry storage are becoming worn at edges and should be sealed to facilitate cleaning.
