Staff in kitchen today has a valid Food Safe certificate (exp 2028). Coolers are at 4C or colder. ***Keep daily temperature records - see above. Hot food is at 140F/60C today. Reviewed procedures for cooling. Hand washing sinks in dining area and main kitchen - both have hot/cold water, liquid soap, and paper towels. Chlorine sanitizer in labelled spray bottle - is at 200++ppm. 100-200ppm required so further dilute with water and make fresh daily. Verify with test strips. **Cleaner disinfectant - for cleaning non-food contact surfaces (10 minute contact time and potable water rinse required). Dishwasher - using sani-cyle and hot dry cycle. Premises clean and well-organized. No obvious signs of pests. **Note that shelves in dry storage are becoming worn at edges and should be sealed to facilitate cleaning. Copy of this report to be emailed to management. Inspection carried out with chef on site.
