Observation (CORRECTED DURING INSPECTION): Large open can of "White Queso Cheese Sauce" covered with saran wrap covered.
Corrective Action(s): Ensure all open cans of food products are poured/relocated into a container with a tight sealing lid. Cans once open are not sufficient to keep the food protected from contamination.

Observation: Raw wood:
1. Exposed wood shelves - water damaged right of 3 comp sink - wood expanding.
2. Block of wood used to prop up milk/cream pump in walk in cooler
3. Strip noted on front cabinet - door missing
Corrective Action(s): Ensure all surfaces in food premise are smooth, durable, easy to clean and non-absorbent. Raw wood does not meet these requirements.
-Cover / replace raw wood to protect surfaces from further damage

Observation: 1. 3 comp sink - leaking water out of faucet when knobs are both shut
2. Main back handsink faucet does not shut off easily - knobs continually turn and do not completely stop and shut off water - somewhere in between turns
Corrective Action(s): Ensure all faucets are operating properly and are easy to operate.

Observation: Small gap (11 inches) around broiler and patty freezer.
Corrective Action(s): Ensure there is adequate space around broiler to safely get to back hot food prep area.
Owner will be relocating patty freezer and extra oil to another part of kitchen. Patties will be relocated into walk in freezer with the side reach in doors. Walk in freezer will be re-organized to allow for reach in option - currently blocked by frozen ice cream cake racks.

-Owner will discard mercury bulbs through proper hazardous waste processes.

Routine:

***Renovations completed in front of house prep area and dining area - floors, painted walls, updated counters. No changes in equipment or re-location.
-Back of house kitchen - improved LED lighting, removal of ice wells for hamburger prep (new prep cooler added), relocated 1D standing freezer next to walk in freezer door.
-Previous plans to relocated broiler has been cancelled - will make access around broiler larger once access to walk in freezer side doors are clear and more organization of supplies in the back.

Temperatures satisfactory:
3D cake freezer: -20 C
1D desert freezer: - 19 C
Desert prep cooler: 2 C
Walk in cooler: 3 C / freezer: -20 C
Meat patty reach in freezer: -19 C
1D standing freezer: -18 C
Back burger prep cooler (new): 3 C -replaced ice wells
Gravy hot hold: not in use during inspection
Burger Pattie hot hold unit: 65 C (bacon)

-Hand sinks and staff washroom supplied with hot & cold water, liquid soap and paper towel
-Sanitizer buckets noted at 200 ppm QUATS
-3 comp dish washing sinks - 200 ppm QUATS prepared, plugs available
-No signs of pest activity noted during inspection - PC provided by Abell PC - last month of PC reports reviewed - no concerns noted
-General sanitation satisfactory
-Health permit posted


***Once all equipment has been relocated and renovations are completed - updated floor plan with equipment location will be required by Fraser Health. Email a copy once completed.
