Observation (CORRECTED DURING INSPECTION): Found cutting board on top of a piece of wood over mop sink being used to cut fish for sushi. No hand sink in the back storage area.
Corrective Action(s): Must do all food handling in the front food prep area where the hand sink and proper food contact surfaces are located.
Stop all food handling in the back room, it is only for storage and for disposing of dirty mop water.

Observation (CORRECTED DURING INSPECTION): Found deep fried tofu at 28 C after 3.5 hours.
Corrective Action(s): Discard tofu. Must keep potentially hazardous foods above 60 C or cool quickly 60 -20 C in under 2 hours, then place in cooler and cool to 4 C in 4 hours.

Observation (CORRECTED DURING INSPECTION): Liquid soap was completely blocked by multiple rolls of packaged paper towel.
