Observation (CORRECTED DURING INSPECTION):
- Sanitizer buckets with wipes had no detectable chlorine.
- Bleach sanitizer in spray bottle (sushi bar) bleached out the test strip.
Corrective Action(s):
- Ensure to make sanitizer solutions in correct concentration. Manager has test strips on site. Do not use scented bleach - use unscented version only. New sanitizer solutions were made at the time of inspection and they were measured at 200ppm chlorine.

Observation:
- Dry ingredient baskets are not in clean condition (spilled sugar and other debris observed).
- Debris observed on floors underneath back storage shelves.
- Staff washroom not in sanitary condition. Manager states washroom is not in use. Clean the floor & toilet and keep the toilet covered.
- Debris build up observed on the rubber seals of cooling units.
Corrective Action(s):
- Clean the areas noted above.

Comments

All sinks are fully equipped.
All coolers at 4C or below.
All freezers at -18C or below.
Hot held rice & miso soup at 60C or above.
Hot held prawn tempura observed at 40C - manager stated this will be used up within half an hour. Store is a busy restaurant and the food turnover rate is high.
High temperature dishwasher reached 71C or above during the final rinse.
Bleach sanitizer in spray bottle (for the dining area) measured at 200ppm chlorine.
Vent hood in sanitary condition.
Ice machine in sanitary condition. Scooper is held by the holder inside the machine - not in direct contact with store ice.
Sushi rice machine (roll machine & nigiri machine) in sanitary condition. Manager stated the machines are dismantled and washed every night. Ensure the parts are ran through dishwasher.
No signs of pest activity observed at the time of inspection. Manager stated no recent pest activity was reported from monthly ORKIN pest control/monitoring.

Walk-in cooler floor lining work has been done. Walk-in freezer floor work still pending. Ensure the lining work is done for the WIF as the floor is damaged.
