205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food inside the prep. cooler was measured between 5.5 to 6 degrees C. Lid of prep. cooler was left open for the lunch rush. Prep. cooler was at or below 4 degrees C prior to the lunch rush according to the Operator, however prep. cooler did not return to a temperature or below 4 degrees C during the inspection.
Corrective Action(s): Operator moved cold potentially hazardous food to the walk-in-cooler during the inspection. Ensure cold potentially hazardous food is stored at or below 4 degrees C.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Potato press with food debris over it was stored on the air drying shelving unit near the 3-compartment sink.
Corrective Action(s): Operator moved the potato press to the first compartment of the 3-compartment sink for manual warewashing. Disassemble, wash, rinse, sanitize, and air dry the potato press; Correct today and prior to reusing it.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of grease/food debris was observed on the following areas: ventilation hood panels & canopy, stainless steel wall paneling near the cooking equipment, floor near the cooking equipment, floor below the 3-compartment sink, and shelving units near the ware-washing areas.
Corrective Action(s): Thoroughly clean and sanitize the aforementioned areas to remove the build-up of grease/food debris; Correct within 2 weeks and contact the district Environmental Health Officer for a follow up inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Prep. cooler near the cooking line was at a temperature between 9 to 11 degrees C at the time of inspection.
2. Sweets cooler was at a temperature of 7 degrees C at the time of inspection. Operator had a staff member adjust the temperature setting to reduce its' temperature.
Corrective Action(s): Ensure all refrigeration units are maintained at or below 4 degrees C. Do not store any cold potentially hazardous food inside the aforementioned coolers until they are maintained at or below 4 degrees C.

Observation: Thermometers inside the prep. cooler and sweets cooler were not providing accurate temperature measurements.
Corrective Action(s): Replace the thermometers inside the prep. cooler and sweets cooler with new accurate thermometers; Correct today.

Handsinks in the front service area, back prep. area, and staff washroom were supplied with hot and cold running water, liquid soap, and paper towels.
100 ppm chlorine sanitizer was available in a spray bottle and third compartment sink unit.
3-compartment sink was supplied with hot and cold running water.
Walk-in-cooler was at or below 4 degrees C.
Upright freezer and chest freezer were at or below -18 degrees C.
COVID-19 safety plan was available on-site.
Operator stated that staff screening is conducted.
Operator stated that they are only doing take-out at the moment.
Maximum occupancy limit was posted.
Hand sanitizer was available near the front entrance door.
Signature on the report is not required due to the COVID-19 pandemic.
