Observation: Back door to the kitchen was opened. Many small flies noted in the bar area.
Corrective Action(s): Keep door shut to keep out pest. In the bar, wipe down counter surfaces with sanitizer and clean floor to the back wall to remove sticky residue that can attract pest and be a breeding ground.

Kitchen- clean under the fryer and grill to remove grease and debris.
Ensure bottles of chemicals in sprayer bottles are labelled.
Obtain test strips for the sanitizer by Ecolab to ensure concentration of the active ingredient is adequate.
Stuck on food debris noted on the meat slicer. Ensure it is disassembled and scrubbed clean before sanitizing.
The floor surface in the walk-in cooler should be replaced so that it is smooth and non- absorbent.
Temperature of refrigeration units are satisfactory. Sanitizer is detected in the kitchen dishwasher. Test strips are available for staff to check.
Probe thermometers are available and accurate.
General food handling procedures and practices are satisfactory.
