306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Dish pit dirty and many dishes from previous night remain. Floor, especially behind and/or under chemical containers/wheeled dollies and in corners is dirty and is suffering an accumulation of slimy stagnant water and food debris. Slip mat is dirty with a significant amount of grease deposited in the grooves of the mat. Fruit flies are evident in the dishpit area.
Corrective Action(s): 1) Mat should be cleaned daily in a manner that will prevent the build up of greasey waste in on and throughout the mat. (**Apply degreasing detergent -> let soak -> nozzle spray off residue -> drape over counter in dish pit and allow to dry overnight).
2) The dishpit should be properly cleaned nightly, including ALL dishes from that day cleaned and removed from area! Chemical containers should be moved and cleaning should include areas behind legs of equipment.
3) The underside of equipment, counters, exposed pipe work etc. should be regularly cleaned to help control or eliminate the fruit/drain fly breeding in this area. Maybe this will help eliminate the pests facility-wide.
The above will be checked at follow up inspection date noted on report.

**Recommend the dish pit cleaning crew sign-off completed cleaning of this station on a daily basis. Does the sanitation plan for this facility adequately cover off the dish pit. A review is needed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Tail pipe leading from hand sink in bar area not tightly sealed to sink. This is allowing a potential breeding ground for fruit flies which are still evident in this location of bar. Tail pipe below dishwash spray sink is leaking and extremely dirty (picture taken).
Corrective Action(s): Replace tail pipe fittings with proper ones and ensure they do not leak. This includes the dishpit and bar handsink drains. Ensure this fitting fits tightly to the sink drain as per plumbing code. Submit action plan and timeline for completion to this office for review. Submit within 1 week.

Ice machine room is better. However, the check valve drain behind the ice machine is not intercepting all the water and puddles of water and food debris are building up on the floor, contaminating the wired shelves stored here (picture taken). Move the shelves and fix the plumbing design such that the water is properly draining and water doesn't leak onto the floor.
