Observation:
The floor under storage racks, in the walk-in-cooler, has accumulated food on it. This will attract pests or allow mold to grow.
Corrective Action(s):
Clean the floor under all storage racks in the walk-in-cooler, ensure this is done on a weekly basis. It is recommended that the lowest shelf of each rack, is raised high enough so that a mop can fit under it. This will allow cleaning of the floor easier and quicker, instead of having to move the whole rack to clean the floor.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler 4C or colder; freezers -25C or colder; hot holding units 60C or hotter; thermometers present; and temps. recorded daily.
- Quats sanitizer in spray bottles, cloth buckets, and 3-comp sink was 200ppm strength.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Cupboards below the 3-comp sink have been painted. The surface is smooth, sealed, and cleanable.
- All damaged walls have been repaired.
- Foods stored in food grade containers; covered; labeled; date coded; stored in groups with proteins separate or below RTE foods; and stored 6" off the floor on racks or shelves.
- No expired foods found in use. FIFO rules being followed.
- General sanitation level is satisfactory. Exhaust hood service sticker indicates cleaning to be done this month, operator stated that a professional company is scheduled on Feb. 5/19 to complete the cleaning.
- No signs of pests.
- Operator & manager have successfully completed the FS Level 1 refresher course.
