306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Food, chemical bottles and other miscellaneous items were observed to have accumulated under the upright coolers and freezers at the back. Shift supervisor informed that the area is cleaned once a week.
2. Chemical bottles were stored on the floor under the 3 compartment sink. The area underneath was observed to have a build-up of food and debris. Shift supervisor informed that the area under the 3 compartment sinks should be cleaned nightly.
Corrective action:
1. Clean the area under the coolers and freezers at the back. Ensure to clean hard to reach areas according to the sanitation plan or when necessary.
2. Store extra chemical bottles off the ground at least 6 inches to facilitate cleaning under the 3 compartment sink. Clean the area under the 3 compartment sinks nightly according to the sanitation plan. Ensure that all items are stored above ground at least 6 inches and to clean hard to reach areas regularly.
Health rationale: Build-up of food and debris may attract potential pests and may contaminate food.

Comments

Routine inspection was conducted: The following was obseraved.

1. Temperatures
All coolers (single door upright cooler, double door upright cooler,under counter coolers) at or below 4C.
Freezers (single door freezer and double door freezer) at -18C.
Temperatures are monitored automatically and is displayed through Ipad at the back. The automatic system displays a warning when a cooler is above 4C (40F) and when a freezer is above -18C (0F).
Temperature logs are maintained and up to date.
Thermometers are present in coolers and freezers.

2. Sanitation
All hand washing stations were accessible and equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sinks with drain plugs available for manual ware washing.
High temperature dishwasher measured 77C at the plate level during the final rinse cycle (required minimum 71C).
QUATs sanitizer for food contact surfaces in pails and trays were at 200ppm.
QUATs from the dispenser at 200ppm.
QUATs pails and trays changed after 2 hours.
In-use utensils cleaned and sanitized after every 2 hours.
Overall sanitation satisfactory (see above violation code 306).
Ice machines were in sanitary conditions.

3. Storage
Food items were covered and labeled.
Food items were stored above floor at least 6 inches.
Single-use cups and containers were covered and safely stored.

4. Administrative
FOODSAFE Level 1 equivalent assistant manager was on duty (expires June 4, 2026).
Permit posted at front.

5. Hygiene
Staff were observed to be washing hands frequently and in between tasks.

6. Pest activity
No visual sign of pest during inspection
Pest control program in place (every 6 weeks).
