Code 302 noted on Routine inspection # BCUD-AQRUEA of Aug-31-2017 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Meat slicer found left overnight with heavy food debris. A correction order has already been issued for this violation. Spot checks will be done with violation tickets issued for noncompliance)

Pizza prep cooler has been defrosted. "Cold" side 1-2C, "warm" side 3-4C. Automatic defrost cycle has been changed, increasing time. Temperature monitoring of this machine must be diligently maintained. Meat slicer found in good sanitary condition. Keep it this way. No more warnings will be given. Lids have been added to food containers in walk in cooler. Sinks found in clean state - fruit fly situation less than yesterday. Good, keep up with hygiene and sink cleaning to eliminate the problem. Screen door has been repaired - flap has been reattached to the bottom of the frame. Outstanding: Sanitation checklist to be developed - email/ fax/ send/ drop off a copy of the checklist to your EHO for review. The implemented checklist will be checked for completeness at each inspection along with your temperature logs Thorough cleaning of floor to occur at dough flattening machine. Cleaning also required behind cheese bins in walk in cooler.
