Follow up Inspection:

-The walk-in-cooler was 3.1 degrees C (4 degrees C or colder) after it was re-serviced by a technician this morning.

The following issue is still outstanding:
-The bottom portion of the line cooler was at 16 degrees C however the sauces in the inserts at the top were at at 4 degrees C or colder on the left hand side. Fish was 4 degrees C or colder in the insert as well. Prepped vegetables in the inserts were above 4 degrees C on the right hand side of the cooler. Only a small amount of food that would turnover in 4 hours is permitted in this unit until it is maintained at 4 degrees C or colder.
-The head chef had a thermometer placed inside the line cooler and will be keeping track of the temperature and time of food placed into it today. They are working a late shift today.
-A technician has been scheduled to repair the cooler tomorrow morning so that the entire cooler can be maintained at 4 degrees C (40 degrees F) or colder.
