Observation (CORRECTED DURING INSPECTION): Cooked food displayed in hot-holding unit had internal temperatures ranging between 38-47'C. These items were labelled as 11:25 to 11:45. Staff was to sell the items to customers at 2:10pm and stopped by the inspector at this time. All items past 2 hours since prepared were discarded at this time.
Corrective Action(s): Ensure all cooked foods are stored above 60'C at all times. If to follow time monitoring system, it has to be strictly followed. No exception allowed even when busy.

Follow-up inspection conducted:

It is operator's responsibility to have all staff trained regarding the time monitoring system. Being busy can never be accepted as an excuse for not following facility's approved food safety plan. This is last warning.

Correction Order issued on October 5th still in effect. Repeated violation will automatically result in issuance of Tickets - for 1) not keeping hot food above 60'C and 2) not complying with the Order.
