Routine Inspection
- hand wash station stocked with liquid soap and paper towels
- walk in cooler and prep coolers in use ambient air temperature below 4 degree Celsius. Clean the walk in cooler fan grill.
- Freezers that are in use ambient air temperature below -18 degree Celsius
- hot holding temperature above 60 degree Celsius
- 50 ppm Cl solution available in the dishwasher rinse cycle
- quats sanitizer available. Concentration too strong. Mix as per manufacturer directions. Practiced mixing the proper contraion with the operator.
- Food safe trained staff available
- general sanitation satisfactory at the time of inspection
- no activity of pest noted during the inspection
