General temperature controls good. Hot holding above 60 C. Cooling units all below 4 C. OK. **Effective use of bleach still needs some work with dishwashing and surface sanitizing. Ensure proper three step dishwashing process is followed. Do not mix detergent with bleach water; do not rinse dishes after soaking in bleach water. Bleach will evaporate in air and improve dish drying. Dishwashing sign left for operator. Temperature monitoring in place - good. long-term use of temperature logs to record temps a good idea. Painting planned. Good. Start to plan to replace ceiling tile too, and with food grade cleanable tiles. Will brighten things up as well.
