Observation: Water was leaking from the ceiling of walk in cooler and a small container was placed on floor to collect the water.
Corrective Action(s): Repair the cooler and ensure that it is maintained in good working order. Please notify the district EHO once the cooler has been repaired.

Comments

Routine inspection conducted at the food facility. Improvement noted in terms of general maintenance.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler at 4C
- Chest freezer at -20C
- Dairy based sweets were stored at room temperature. Staff stated that small trays are used for storage and sweets are not stored for more than 4 hours.
- Staff was cooling down boiled potatoes and fried vegetarian patties at the time of inspection and was aware to follow the cooling curve: 60C to 20C within 2 hours and 20C to 4C within 4 hours.
- Temperature logs were maintained.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Back storage area has been re-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Bleach sanitizer solution was measured at 200ppm.
- 3 compartment dishwashing sink used for manual dishwashing. 200ppm bleach recorded in 3rd sink.
- Utensils and tongs were found in sanitary condition.
- Kitchen hood was serviced in March 2022.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Back screen door was properly closed.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (May 2023).
- Staff has good knowledge regarding safe food handling and storage practices.
