Detergent feed foams quite a bit. Make sure dishes get thoroughly rinsed before putting into sanitizer sink to remove any residual detergent. This will allow the quats sanitizer to work at optimal level.
Make sure to get paper towels into dispensing unit at front handwash station.

Cooling units OK. less than 4 C.
Hot holding ok. above 60 C. Make sure water level in steam table for meatballs touches the bottom of all the containers to ensure proper hot holding temps are maintained.
