Observation: A small number of flies and drain flies noted in facility.
Corrective Action(s): Pest control is in place, UV fly lights had glue boards replaced last week. Drains were also serviced last week. Ensure mop sink area and any drains are kept dry and clean. Continue with pest control services.

Comments

- All hand washing sinks were unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels
- Sanitizer buckets had just "expired" at time of inspection. All buckets were refilled with fresh Quats solution at 200 ppm during inspection.
- All ice water slurries were also due to be changed at time of inspection and were changed accordingly.
- High-temperature dishwasher reached 74C at dish surface during rinse cycle - good (minimum of 71C at dish surface is required).
- Equipment maintained in sanitary conditions.
- Food storage practices satisfactory
- All coolers were maintaining temperatures of 4C or colder. Prep cooler inserts were covered - good.
- Freezer measured at -18C
- Hot held food items were measured to be at 60C or hotter
- Accurate thermometers available for use
- General sanitation satisfactory. *Ensure floors in back around dishwashing area are regular dry-mopped to prevent any pooling water.
