Observation: Rodent droppings (mouse) noted on floor of dry food storage (moderate), behind steamer, and behind ice machine (minimal). Activity noted inside condiment cupboard including peanut butter packets half eaten.
Ant nest noted below steamer section of kitchen. Ants active below and throughout this section, but also migrating to dish pit and prep sinks.
Corrective Action(s): Rodent control: Review recommendations of Pest Control Operator (PCO) under contract.
Additional action: Get all boxes and containers off floor in dry storage room and monitor mouse droppings. Seal up breaks and damaged walls in this area. Clean up and remove food debris in above noted areas and any other hard to reach places in food prep and storage.
Ants: Clean up the area below and around steamer section. Seal nest opening.
**Discuss other options with PCO. Implement recommendations of PCO.

Observation: Walk-in freezer floor has some build up of food under shelves.
Steamer section of kitchen neglected on floor and behind equipment.
Area under dish pit is dirty.
Bar cooler floor is dirty. Drip line to unit is deadending on floor.
Corrective Action(s): Clean identified areas as discussed.
Make sure cooler drip line at bar is re-located.
This will be checked on re-inspection date noted on report.

Comments

Pest control: Make sure traps are properly set and located along corridors of movement. Place along wall. Seal up holes in dry food storage and behind steamer areas.

Tray for scrub brush at dish pit is dirty and accumulates stagnant water. Drill hole so water can drain out of this tray. Clean daily. **Alternatively, keep tray filled with quats to ensure the scrub and tray stays sanitized.

Make sure quats spray bottles are always placed in several designated locations in kitchen for easy access.
