Observation (CORRECTED DURING INSPECTION): 1) Potato press and vegetable peeler was found to have food debris from last night. This is a continuing deficiency.
2) Bleach spray bottle sanitizer was too strong. Solution bleach out the test strip.
Corrective Action(s): 1) All equipment must be cleaned and sanitized after each use to prevent potential cross contamination of foods. Equipment was washed and sanitized at the time of inspection.
2) Bleach sanitizer in excess of 200ppm is not considered food grade. Ensure bleach is maintained at 100ppm to 200ppm to properly sanitize food contact surfaces. Bleach was diluted to 200ppm at the time of inspection.

Corrective Action(s): In the absence of the operator, at least one person on-site must have FoodSafe Level 1 or equivalent. Operator with FoodSafe arrived on-site at the time of inspection.

Comments

-Follow-up inspection to February 15, 2018.
-Bleach sanitizer pail and 2-compartment sink were properly prepared with 200ppm bleach sanitizer at the time of inspection. Spray bottle was diluted to 200ppm at the time of inspection.
-Did not observe any potentially hazardous foods stored out at room temperature at the time of inspection.
-Did not observe any foods stored in garbage bags at the time of inspection.
-Did not observe any used gloves on site at the time of inspection.
-Did not observe foods stored in opened cans at the time of inspection.
-Did not observe frozen foods thawing at room temperature at the time of inspection.
-Cook line leaking oil pipe has been repaired and oil has been cleaned up.
-Light shield in the kitchen has been replaced.
