Observation (CORRECTED DURING INSPECTION): Broken insert cooler. Facility using ice baths. Ice baths not maintaining temperatures of less than or equal to 4 degrees Celsius during time of inspection. Internal temperatures of potentially hazardous food items measured to be in the range of 3 to 14 degrees Celsius. CORRECTED DURING INSPECTION - Food to be time tracked with stickers. After 4 hours food is to be destroyed. Currently facility operates on weekdays from 9am to 6pm.

Corrective Action(s): Ensure time recording is occurring.
EHO to follow up.
If time recording is not occurring facility will not be able to utilize time tracking as a means of utilizing insert cooler.
Ice baths are not working as ice baths can not achieve temperatures of less than or equal to 4 degrees Celsius.
NOTE: This is NOT a permanent solution. The cooler unit is to arrive in this week.

Observation: Rodent droppings observed on lower shelves of front cash area.
Facility has services of Pest Control Company.

Corrective Action(s): Remove all dishes and equipment from lower shelves until rodent infestation is eliminated.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.

Observation: Insert cooler unit for sandwich preparation has broken approximately 1.5 weeks ago. New replacement unit has been ordered however will not be replaced for 1.5 weeks.

Corrective Action(s): Replace insert cooler IMMEDIATELY. Ice baths and time recording (four hours for potentially hazardous food items) is not a permanent solution.
