Renovations have been completed. No changes to the setup made, except for new equipment. All surfaces are smooth and easy to clean. All equipment is commercial grade.
Recommend the addition of a hand sink outside of the utensil storage room, as discussed.
As a reminder, 1 tsp of bleach per Liter of water can be used as a sanitizer solution or a 200 ppm Quaternary Ammonium solution.
Dishwasher final rinse cycle reached 74 C at the plate level.
Hand sinks supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests.
General sanitation was satisfactory.
