2. Trays used for reheating cooked proteins not washed regularly.

1. Store ham inside a container to protect from cross contamination. Clean and sanitize container when changing new ham.

- all coolers and freezers temp. adequate. *Ensure to scrape down the ice build ups in the stand up freezer beside proofer*
- All foods stored in cabinets, off ground.
- hot holding for soup >60 degrees Celsius.
- Adequate lighting in back storage area.
- floor is clean, no signs of pests during inspection, bleach sanitizer spray bottle @ >100 ppm.
