A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -15C or colder; hot holding units 60C or hotter; thermometers present; and temperature recorded daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water. The hand sink was accessible and nothing was in the basin.
- 3-compartment sink had quats sanitizer in 3rd sink. Quats was 200ppm.
- Clean cloths were being stored in bleach sanitizer, the [Cl2] was 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins stored separated or below RTE foods; all foods stored 6" off the floor on platforms, racks or shelves; and cleaners stored separated from food and food containers.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. The exhaust hood and filters were professionally cleaned this month. Next cleaning scheduled in December 2019.
- Spilt food on the floor in the dry storage area was found. Staff are in the process of cleaning up the spilt food during the inspection, as more stock will be received today.
- No signs of pests.
- A new grease interceptor was installed, and floor surrounding the interceptor is not smooth, sealed, level or cleanable. Repairs to the floor are to be completed in the coming weeks.
- FoodSafe certified staff present.
