Observation: Although some of the floor area and walls behind the cooking line have been cleaned there are still some areas filthy with food debris and grease.

Worker indicates he cannot access those areas without special tools or professional cleaners
Corrective Action(s): All areas must be cleaned and disinfected

Observation: Back area beside the frying vat and cooking lines are still filthy with grease and food debris

NOTE: worker explains the frying vat and range cannot be pulled out because the gas is connected directly to the back
Corrective Action(s): All gas cooking equipment shall be connected by flexible gas lines and be placed on castors to facilitate cleaning -this is a requirement for all restaurants.
