Observation (CORRECTED DURING INSPECTION): Cut tomatoes filled since morning (3 hours) was measured at 13.9/14C. Other toppings (e.g. cheese, cut lettuce) were measured to be 8-9C.
Corrective Action(s): Cut tomatoes discarded. Cold potentially hazardous food should be stored at 4C or colder. Refill with fresh toppings and keep the bulk in the back until prep cooler can maintain food at 4C or colder for the top line inserts. Cold potentially hazardous food on the bottom prep cooler were moved to working cooler at time of inspection. Use display thermometer in the unit to monitor ambient temperature and probe thermometer to determine food temperature.
