-Ensure that foods prepared in advance are cooled from 60 C to 20 C within 2 hours or less and from 20 C to 4 C in 4 hours or less. Wings are prepared in the morning each day.
All coolers were < 4 C.
All freezers were < -18 C.
Hand sinks were supplied with hot and cold water, soap and paper towels.
No evidence of pests, pest control reports kept on site.

The bar glasswasher had 12.5 ppm Iodine.
