Observation: Second hot holding unit observed on the bottom shelf unplugged. Food temperature is measured to be 49oC to 54oC.
Correction: Foods must be kept hot at all times at 60oC or hotter. Reheat foods and keep in hot holding unit.

Observation: 1. Staff indicated windex is used to sanitize food contact surfaces.
2. None of the staff could explain how to properly wash dishes manually.
Sanitizer is not used in both cases
Correction: Sanitizer MUST be used to sanitize all dishware and food contact surfaces.

Observation:
Deep fryer for falafels appeared dirty, used and covered in food debris. Staff informed it is used every 2 - 3 days.
Corrective action: fryer must be cleaned and sanitized after every use before storing away.

- Facility cleaned and sanitized areas affected by rodent droppings
- Sanitizer available upon arrival of EHO at concentrations of 200ppm Chlorine

ITEMS TO BE CORRECTED:
- Ensure daily cleaning and monitoring for pests. Facility continues to have pest infestation. Continued cleaned will be required until all points of entry have been eliminated.
- Door sweep to be added to front door.
